Slow Cooker Southwest Chicken Recipe

This recipe for Southwest Chicken is super delicious and super easy for kids to make.  Plus, it includes some fresh herbs and vegetables that your kids will love.

For this recipe, you will need 3 chicken breasts, fresh cilantro, green onions, corn, black beans and diced tomatoes.  Along with chicken broth and cumin, this dish has an amazing Southwest flavor and aroma.

The first step is to cut your green onions and cilantro into small pieces.  Using kitchen shears are a great way for kids to cut small, soft vegetables and herbs.   You can also dice tomatoes in a food chopper to make it easier for kids.

Next, add salt, pepper, garlic powder and onion powder to both sides of the chicken breast.   My little chef likes to sprinkle seasonings with his hands as it gives him better control and coverage.  Don’t forget to remind your little chefs to wash their hands before and after handling raw chicken.

Finally, add the seasoned chicken, chopped herbs & veggies along with the other ingredients to a slow cooker.  Set the slow cooker for 6 hours and let your little chef enjoy the rest of the day.

Once the slow cooker is done, the chicken should be tender enough to gently shred the chicken with fork.  Make sure you encourage your little chef to taste their creation to make sure they are excited about the flavor.  Feel free to add more salt & pepper to make sure it tastes just right.  Serve over whole grain brown rice and enjoy!

Slow Cooker Southwest Chicken Recipe
Serves: 4

Ingredients

  • 1/4 cup – cilantro
  • 3 stalk – green onion
  • 2 medium – tomato, red
  • 1 pound – chicken breast
  • 1/8 teaspoon – salt
  • 1/8 teaspoon – black pepper, ground
  • 1 teaspoon – garlic powder
  • 1 teaspoon – onion powder
  • 1 2/3 cup – chicken broth, low-sodium
  • 1 cup – corn, frozen
  • 15 ounce – black beans, canned
  • 1 teaspoon – cumin, ground
Serve With:
  • 1 1/2 cup – brown rice, raw

Directions

  1. Chop & dice fresh cilantro, green onions and tomatoes.
  2. Season the chicken with salt, pepper, garlic powder and onion powder on both sides.
  3. Add chicken broth, corn, black beans, cilantro, green onions, tomatoes, cumin and seasoned chicken to a slow cooker.
  4. Cook on high for 6 hours.
  5. Shred the chicken with a fork and serve over cooked brown rice.
  6. Feel free to add favorite toppings including more fresh cilantro or green onions.
