Ingredients

  • 1 roast – beef, boneless chuck eye roast, lean
  • 1/4 packet – onion soup mix, dry
  • 1/2 cup 8 fl oz – vinegar, rice
  • 4 medium – carrot
  • 1 medium (2-1/2" dia) – onion
  • 2 potato large (3" to 4-1/4" dia) – russet potato
  • 2 stalk, medium (7-1/2" - 8" long) – celery
  • 4 cup – spinach
  • 4 medium (3" dia) – apple

Directions

1. Season the roast with salt and pepper to taste.
2. Brown on all sides in a large skillet over high heat, about 4 minutes per side.
3. Place the roast in the slow cooker and add the soup mix and water.
4. Cover and cook on Low setting for 8 to 10 hours.
5. Add the cut carrots, sliced onion, potatoes (cubed), and cut celery when there is 3 hours left.  (You can cook them longer, they will just be a bit mushy)

This goes well with a side salad and sliced apples!
