I’m happy to tell you that I’ve finally embraced fall. Finally. It took me a minute to wrap my arms around the season but I’m all in. It helps that for the most part the weather has been pretty decent. Only a few occasional rain storms, which is OK with me. What’s the weather like in your neck of the woods? Where are your neck of the woods? I’m a northern Utah gal myself. Anywhoo, we are hot on the heels of Halloween. Are you ready? Do you have your costume picked out? Do you have your decorations up? Most importantly, do you know what you are going to eat?!

Where are my chia seed fans? Remember when I posted my Coconut Strawberry Chia Muffins for you all here on SHK back in June? If you missed it you’ll definitely want to head over and check them out. They are delicious and one of my favorite muffins! For those that aren’t familiar with chia I’ll catch you up to speed: the health benefits of the tiny little seeds of nutrition are phenomenal. My husband and I have been buying them {in bulk} for a few years now, but it wasn’t until I watched the documentary Hungry For Change that I really jumped on board with incorporating chia seeds into my diet. 1 ounce of the powerful little seeds have 11 grams of fiber, 4 grams of protein, 9 grams of fat (5 being Omega-3s), 18% of the RDA of Calcium, 30% of the RDA of Manganese, 30% of the RDA of Magnesium AND as if that isn’t enough, 27% of the RDA of Phosphorous. Pretty fantastic wouldn’t you say?

Dramatic? No. I’m being serious! This ultra healthy pudding recipe is incredible! I’ve now made it my life’s mission to make every variety possible. My favorite so far (next to this pumpkin) is my Strawberry Coconut Chia Seed Pudding. I am a huge strawberry fan as it is, but this pudding I’m telling you is mouth-watering. Here’s what I love about this pudding:

  • Five ingredients. Generally I can almost bet you have them all on hand, which is my kind of recipe. The more simple the better.
  • 5 minute prep time. Ok maybe six if you count the extra minute it takes to hunt down your can opener to get the coconut milk open.
  • Perfect grab-n-go snack. I divide this recipe up right away into the Glad Mini Rounds that work perfect! Depending on your pudding mixins (strawberries, pumpkin, etc.) 1/2 c. will typically be around 211 calories. It is VERY easy to eat more than the recommended size, so dividing it right away eliminates the temptation!
  • Healthy. I already gave you all the benefits of chia seeds, then you’ve also got some added nutrition with the coconut milk and even in the yogurt (can you say probiotics??)

Pumpkin.

It’s the flavor of the season. It’s everywhere. Pumpkin pie. Pumpkin chocolate chip cookies. Pumpkin bars. All of those are nine times out of ten not good for you. Occasionally you may be lucky enough to stumble upon a healthier or even purely healthy version. But not often. With this pudding there’s no refined sugar. Wahoo! So you get all the yummy flavors of pumpkin deliciousness without loads and loads of sugar. You’re welcome!

Pumpkin Chia Seed Pudding

Ingredients

  • 12 ounce – Greek yogurt, plain
  • 1 cup – coconut milk
  • 1/4 cup – pumpkin, canned
  • 1 1/2 tablespoon – honey
  • 3 tablespoon – chia seeds

Directions

  1. In a large bowl, mix together Greek yogurt, coconut milk, pumpkin puree and honey.
  2. Stir until well combined.
  3. Add chia seeds and mix well once more.
  4. Cover with plastic wrap. and refrigerate for 1 hour, or until set.
