Hello SHK readers it’s Yvonne from Tried and Tasty back again with another great recipe! The last few months I’ve been equipping you with easy breakfast, lunch and dinner ideas. This month I’m bringing you one of the easiest snacks I’ve ever made. Have you ever seen anything more adorable than these pizza kebabs? If you’ve been getting to know me over the last year that I’ve been a part of the SHK team you’ve probably learned that I love all things itty bitty. These tiny kebabs nearly sent me over the edge with their cuteness. I can’t even tell you how easy they are. Well I can attempt to tell you, but it may be better for you to just give them a try yourself. All it takes is a pita pocket, some pepperoni, mozzarella and an olive. Want to get more creative? Go right ahead, these little babies are completely customizable. Love mushrooms? Me too! Green peppers? Throw them on! What about making a Hawaiian version? Take out the pepperoni and olive and add in a cube of ham and a pineapple chunk. Voila!
As I mentioned, the great thing about these is how quickly they come together. I wish I would have set the timer because I’m not kidding when I tell you they take less than 10 minutes. Not including baking time of course, which while we’re talking about baking time I should let you know that you can enjoy these cold or heated (but don’t heat them too long because your cheese will be everywhere). My cheese of preference is fresh mozzarella because is has a high melting point. That means that with a quick bake in the toaster oven you won’t be left with an ooey gooey melted mess but rather a soft and warm chunk of cheese. Perfect for dunking right into your favorite pizza sauce. I hope you love them as much as I do!
When we make pizza, we always make sure we have lots of veggie options. That way our kids can pick and choose their favorites to put on their pizza, (or kebabs!) and then a lot of time end up trying new veggies they may not have tried on pizza before. Some of the favorites our kids have liked are sweet bell peppers, thin sliced mushrooms, sliced cherry tomatoes, and pineapple! (a fruit – but still delicious)
