A birthday is a time for celebration, fun and a few treats.  Cake and ice cream is a classic birthday dessert that encompasses all of these.

But making a fun, colorful cake often involves lots of food coloring.  Food dyes should not be a part of any child’s diet.  They can cause hyperactivity and symptoms of ADD.  Not to mention they are chemicals the human body is not meant to consume and can impair the immune system.

So what is the solution for making a healthy cake that is still colorful and fun?  Yogurt gummies!Ice Cream Flavored Yogurt Gummies. Aren't these the cutest things! We could add them to a cake for decorating too!These fun decorations are edible, healthy and contain nothing artificial.  What’s even better is that you can make them in five different ice cream flavors.  So you get your cake and ice cream all in one dessert.

Each flavor is a different color, so making a variety of themed decorations is easy.

It only takes about ten minutes to get the gummies from the blender to the refrigerator.  They are so quick and easy you can make all five flavors in one day.  Since the yogurt gummies last two weeks in the refrigerator you can prepare them in advance (one less thing to do at the last minute!).Ice Cream Flavored Yogurt Gummies. The five flavors are mint (green), strawberry (pink/red), vanilla (white), chocolate (brown) and blue moon (purple/blue).  If you’ve never had blue moon ice cream, it is typically a mid-west flavor (that is bright blue!).  Here’s a little secret…that strange flavor you can’t quite figure out is nutmeg.

Hands down my kids’ favorite flavor was the vanilla.  How convenient that it is the easiest to make!  Their second favorite was chocolate, of course.  But all five flavors are delicious.

Create any shapes you want with candy molds.  Or you can simply pour the gummy mix into a pan and use a knife or cookie cutters to make the shapes you want.  If you want to get really fancy you can do multiple flavors in the same mold.  Simply fill in the portions of the mold you want with one color and refrigerate.  When it has set add the second color/flavor.

As an added bonus, this Ice Cream Flavored Yogurt Gummies Recipe provides a lot of nutrition.  The whole milk yogurt provides healthy fat and protein, while the grass-fed gelatin contains protein and helps aid digestion (Great Lakes gelatin in the red can is high quality).  The gummies are low in sugar too.

Ingredients

    Strawberry Gummies:
    • 1/2 cup – yogurt, plain
    • 2/3 cup – strawberries
    • 2 tablespoon – honey
    • 3 envelope (1 tbsp) – gelatin, dry powder, unsweetened
    Vanilla Gummies:
    • 2/3 cup – yogurt, plain
    • 3 tablespoon – honey
    • 1 teaspoon – vanilla extract
    • 1/8 teaspoon – sea salt
    • 3 envelope (1 tbsp) – gelatin, dry powder, unsweetened
    Chocolate Gummies:
    • 2/3 cup – yogurt, plain
    • 2 1/2 tablespoon – cocoa powder, unsweetened
    • 3 tablespoon – honey
    • 3 envelope (1 tbsp) – gelatin, dry powder, unsweetened
    Mint Gummies:
    • 1/2 cup – yogurt, plain
    • 1/4 medium – avocado
    • 1/4 tablespoon – mint, fresh
    • 2 tablespoon – honey
    • 2 1/2 envelope (1 tbsp) – gelatin, dry powder, unsweetened
    Blue Moon Gummies:
    • 1/2 cup – yogurt, plain
    • 2/3 cup – blueberries
    • 2 tablespoon – honey
    • 1/2 teaspoon – nutmeg
    • 3 envelope (1 tbsp) – gelatin, dry powder, unsweetened

    Directions

    1. Combine the yogurt, fruit, sweetener, flavor and spice in a blender and blend until smooth.
    2. Transfer the mixture to a small saucepan.
    3. Whisk in the gelatin and let sit 3 minutes.
    4. Heat the mixture over low-medium heat, stirring frequently, just until warmed and gelatin is dissolved (the mixture will loosen/liquify and the dots of gelatin will disappear, about 5-6 minutes).
    5. Pour the mixture into candy molds or a baking pan and transfer to the refrigerator to gel.
    6. Allow the gummies to gel completely before removing from molds (about 20 minutes).
    7. Remove gummies from molds or cut into shapes.
    8. Store in a sealed container in the refrigerator for up to two weeks.
    *Note - the mint/avocado gummies will change color over time since avocados turn brown when exposed to air. It is best to use them within a week.

    Thanks for the recipe, Mary, my husband loves yogurt gummies by Katja, so now I can try to make your homemade version for him and our kids. Do you know the quantity of agar-agar that would replace the 3 spoons of grass-fed gelatin? I am a vegetarian 🙂 Greetings from The Netherlands!
