Grilled Coconut Glazed Fruit Kabobs

Cooking on the grill and eating outside screams summer to me.  Whenever we change up our cooking method, my kids think it is a special occasion and get excited about whatever we are having on the menu.  We try to include grilling on our summer meal plan once a week because it is delicious and fun!  These fruit kabobs are a yummy addition to any meal, and give the flavor of the fruit that yummy grilled flavor, which a tropical twist.  We love having our kids try different flavors and textures of fruits and veggies so that they will grow up learning to love them in different forms.  Cooking fruit brings out the natural sweetness in them, and adding our yummy glaze makes these kabobs and delicious summer dessert!

To make these, first whip up your glaze.  Combine coconut oil, honey and cinnamon and whisk together.  Next cut up you fruit.  We used bananas, apricots, peaches, pineapple, and apples.  They were all yummy and provided different flavors and textures making them fun to eat.  Make sure you soak your skewering sticks in water, to prevent them from burning too much.   Skewer your fruit, and brush on the glaze.  You will want to preheat the grill, because these don’t need to cook long and you don’t want to overcook and have mushy fruit waiting for the grill to heat up.  Heat your grill to 350 degrees or medium-high heat.  Cook these for 8-10 minutes.  You will flip them once during that time.  And that is it!  Quick, easy and delicious!

These are fun to serve at a party, or just for a yummy dinner for your own family.  You can make a lot at once,  which is good because they will go fast!  You can switch up the fruit depending on what is in season and eat these all summer long!

Grilled Coconut Glazed Fruit Kabobs

Glaze:
  • 1 Tbsp Coconut
  • 1 1/2 Tbsp Honey
  • 1/2 tsp cinnamon
Whisk together in a bowl. Fruit for Kabobs:
  • Fresh Pineapple
  • Banana
  • Apricot
  • Peaches
  • Apple
  • Melon
Preheat grill to 350 degrees or medium-high heat. Cut fruit into smaller bit-size pieces. Skewer fruit on soaked skewers. Brush glaze onto the fruit. Grill for 8-10 minutes, flipping once. Enjoy!
