Banana Chia Seed Pancakes

Hi there! I am Kawn from Kids food universe and I am super excited to be sharing this hearty family recipe of ours that will give you a reason to get out of bed! Who knew that pancakes all the sudden could become a superfood?

Banana Chia Seed Pancakes. Naturally sweet and filled with antioxidants, fiber, and protein!

These banana pancakes in a snap are naturally sweetened by the ripe bananas and are filled with antioxidants, fiber and protein that the chia seeds provides so you can serve this treat completely guilt free. The chia seeds also adds a crunchy texture to the pancakes which makes them even better. You can also top the pancakes with your favorite berries and fruit but it is also good just as it is. Another great thing about this recipe is that you can freeze it and reheat it for another family breakfast whenever you or yours crave it. It’s also easy to make. Simply whisk together the ingredients until the mixture turns into a thick liquid, the typical pancake consistency.

It is a shame these days how the stigma of fast food has eroded our belief that some dishes could not possibly be healthy. However you will not find a more delicious and nutritious meal than these Chia Banana Pancakes. While you won’t find this superfood dish on the menu at any drive through takeaway, your house might suddenly become the most popular place after school with these tasty treats. Although my little boy is a few years away from his school years, I want him to know healthy food and taste the difference. Hopefully when he is older and able to make his own decisions he will remember how good his dear mum’s food tasted and how eating healthy is a way of life. I love to pack flavors into all my dishes and draw on my Lebanese heritage mixed with what I now have around me in Denmark where I now live. Banana Chia Seed Pancakes

  • Nutrition per serving   % daily value
  • Calories: 260 13%
  • Fat: 12 g 18%
  • Carb: 32 g 11%
  • Fiber: 7 g 28%
  • Protein: 11 g 22%
  • Sugar: 12 g

Ingredients

  • 3 tablespoon – chia seeds
  • 4 large – egg
  • 4 small – banana
  • 1/2 tablespoon – baking powder
  • 2 tablespoon – flour, all-purpose
  • 5 tablespoon – flour, almond
  • 2 tablespoon – milk
  • 1 tablespoon – butter, unsalted

Directions

  1. Peel and mash the bananas until it becomes smooth and pudding like.
  1. Whisk together the eggs and bananas until they are completely combined.
  1. Add the rest of the ingredients little by little while blending it well, and continue till the mixture turns into a thick liquid.
  1. Warm a medium sized pan and add a little butter to prevent the pancakes becoming sticky.
  1. Scoop about 2 tablespoons of mixture on to the hot pan and do not widen the pancakes too much. When you add the mixture to the hot pan it should sizzle immediately.
  1. let it cook for about 1 minute and then turn it over gently with a spatula and give it another minute. It should turn golden brown and should be more firm before turning it over. Remember the first pancake rule, which is tthe first pancake always turns ugly, so do not get disencouraged!
  1.  Serve them warm and if you want top them with berries and fresh fruits.

Would you be able to freeze these ? If so for how long ?

Have you tried using all almond flour? We can’t use grain flours in our house.

yes I have an it works fine with almond flour.

Would it taste the same/will the recipe work without using almond flour at all?
