I had to share another recipe for kale chips because a) they’re amazing, b) they’re a great way to get your kiddos to eat their leafy greens and c) these ones just sound too darn good not to share. Baked Carrot Chips

Crispy Carrot Chips -- dip these in a greek yogurt tzatziki sauce and it would be the ULTIMATE snack!

You’ve heard of carrot fries, right? Like sweet potato fries but with carrots. Carrot chips though? Even better. I love that these are made long instead of little rounds like most chips – they kind of remind me bacon strips, but obviously without all the grease and nastiness. Again, this recipe you could spice up however you like, but I’m thinking chili powder and sea salt would be delicious!
